Merry Christmas!!

MERRY CHRISTMAS!
My has the year flown by! This time last year if you would have said to me that I was going to fall in love with cake decorating and start a blog I would have laughed out loud (not AT you...WITH you, of course!) It's been a really wonderful year for me personally as I got to discover my passions for cakes and writing and to top it off I started a new life in my home country of beautiful Malaysia. Life never fails to surprise me and I always think we must always be grateful for what we have. I wish you, my awesome readers, whatever race or religion you are, a Merry Christmas, Happy (Safe) Holidays and Happy New Year. Thank you for your support this year and I'm looking forward to see what 2012 brings! To finish off my last blog post for 2011 here are some pics of my Xmas projects :)

Pulau Lankayan


PARADISE OF THE SULU SEA
What's your idea of paradise? Your own home? A bali resort? For me, it's a little island in the Sulu Sea called Pulau Lankayan or Lankayan Island. About an hour's boat ride away from my home town of Sandakan this little gem is a beautiful place in a marine conservation area.
I've been to Lankayan before and everytime I go I seem to learn or see something new under and above the sea. Lankayan is one of the best sites for divers and if you're an avid diver this is a place you must visit. Lankayan is known for its reefs and micro marine life (although sting rays, sharks and huge turtles can be seen visiting from time to time!) and it seems super popular with Europeans as I always seem to see European divers here everytime I come visit. Who would have thought that this little Borneo treasure was famous in Europe? :)

I don't cry. I bake...lemon cake with buttercream frosting!

HELLO, peeps! Sorry I've been a little M.I.A lately. If you're a follower on my Facebook page you would have noticed that I have been baking. Yes, baking using my new mixer, Kenny (obviously derived from Kenwood...I wasn't feeling super creative at the time). 

For any baker, a mixer is a vital part of our baking tools. Sure you can use the hand held mixer but it just doesn't mix as well as a free-standing mixer.  I was tossing between this and the KitchenAid (in yellow!) but in the end I went with the trusty Kenwood which our family has used since I was little so I decided to keep it old school. Maybe I'll get a KitchenAid if I ever become a rich and famous blogger/baker  ^.^

I decided to christen Kenny with some sort of lemon cake so my first go was with some lemon cupcakes with cream cheese frosting. As it was quite a messy affair it was quite hard to take pics as I went along but here are the finished piped cupcakes!
